Helen chose this recipe because it's simple, low budget and flexible as you can easily swap out ingredients you don't have. It's based on an ingredient we often have to hand - canned tuna, which is often a favourite with children and has lots of health benefits.

Ingredients / Ingredientes:

2 Cans tuna / Latas de atún

1 Teaspoon lemon zest / Peladura de limón

1 Tablespoon lemon juice (aprox 1/2 lemon) / Cuchara de jugo de limón (aprox. 1/2 limón)

2 Slices of bread / Rebanadas de pan

1 Egg / Huevo

2 Teaspoons Dijon mustard (or any other type of mustard you have at home) / Cucharaditas de mostaza de Dijon (o otro tipo que tengas en casa)

1 Teaspoon oil / Cucharadita de aciete

2 Tablespoons parsley (or another fresh herb you like) / Cuchara de perejil (o otra hierba fresca que tengas)

2 Tablespoons spring onions, chives or onion / Cuchara de cebollines, chives o cebolla

1 tablespoon of water (or liquid from cans of tuna) / Cuchara de agua (o agua de la lata de atún)

Salt and pepper / Sal y pimienta

Chilli sauce for extra flavour / Salsa picante para agregar sabor

This has two eggs because I doubled the ingredients for my family!

Method / Método:

1- Drain liquid from tuna, if you are using tuna packed in water, keep a tablespoon of the tuna water, and add a teaspoon of olive oil to the tuna mixture in the next step

2- Tear up the bread into small pieces

Hacer el pan pedacitos

Mix tuna with mustard, bread, zest, lemon juice, water, parsley (or other herb), chives (or spring onions or onions), chili sauce (if using), salt and pepper in a bowl - taste to check for flavour before adding the egg

3- Divide the mixture into 4 balls then flatten into a patty. It is best to chill for an hour (to help them stay together when you cook them) but you can cook them directly if you're in a rush

4- Fry with a little oil and cook until nicely browned, 3-4 minutes on each side

5- Serve in a bun as a hamburger, in a wrap with salad or with some potatoes and vegetables
