This week our lovely PACT volunteer and fabulous cook Kolpona shared a vegetable curry with the Family Food Club, see below for the full recipe.

Kolpona’s Vegetable Curry

Kolpona shared a tasty vegetable curry with the Family Food Club. It’s a great option because you can use any vegetables you like so it’s nice and flexible for whatever you find in your kitchen! Also, the spices are used for a wide variety of dishes so are well worth having in your cupboard.

Ingredients:

2 onions, finely chopped

3 garlic cloves, finely chopped

1 Tomato, sliced (can also use tomato puree)

Green beans, chopped

Peppers, chopped

Tinned sweetcorn

Butternut squash, chopped

Potatoes, chopped in large pieces

½ Cup lentils, rinsed

1 Teaspoon coriander powder

1 Teaspoon chili powder (to taste)

1 Teaspoon turmeric powder

2 Bay leaves, snapped in half

Fresh coriander, chopped

Salt (to taste)

1 Tablespoon oil

Method:

1- Prepare all of the vegetables

2- Heat the oil in a pan add the onion, garlic, bay leaves then tomato

3- Lower the heat and put lid on the pan, occasionally stirring until onion has softened

4- Add coriander powder, turmeric and chili stir then put the lid on for 2 minutes

5- Add the lentils and a touch of water and put on a medium heat with lid on

6- Once the lentils have softened add all of the vegetables except the potatoes, stir together

7- Add potatoes and hot water to cover, stir then cover with lid

8- Once the vegetables have cooked add fresh coriander and serve with rice, chapatti or naan bread

Maria didn't have any lentils so she added red beans and it turned out great!
